Roasted sesame powder
Roasted sesame ground with a little salt. Sesame is among the richest common sources of dietary calcium and iron.
Method

Dry-roast the seeds on medium-low, stirring constantly, until they pop and smell nutty.

Cool completely.

Pulse to a coarse powder — grind too long and the oil releases and it becomes a paste.

Two weeks at room temperature; longer refrigerated. The oil goes rancid.

Eaten with rice, stirred into vegetables, or pressed into laddoos with jaggery.
