Moringa and white bean soup

A plain white bean soup with moringa leaf stirred through at the end — the leaf behaves much like spinach and needs about as long.

Method

    Soak the beans overnight and simmer with bay until tender.

    Soften onion and garlic in olive oil and add to the pot.

  3. 3

    Blend about a third of the soup and return it, for body.

  4. 4

    Stir the moringa leaves through and cook two minutes more. Finish with olive oil and pepper.

Before you start

Add the leaf at the end. Boiled hard it goes grey and bitter.

Keeping it

Three days refrigerated; freezes well.
