Drumstick leaf dal

Method

    Cook the dal with turmeric until soft.

    Sauté onion and tomato, add the stripped moringa leaves and wilt them briefly — long cooking turns them grey and bitter.

    Stir into the dal and simmer a few minutes.

    Temper mustard seeds, cumin, chilli and curry leaves in ghee or oil and pour over.

Before you start

Strip the leaves from the stalks. The stalks are fibrous and unpleasant.

Two days refrigerated.
